Mango with Coconut Sticky Rice



Now it's summer in New Zealand. Mangoes are quite cheap which mostly came from south-america. When I see these mangoes it just remind me a famous Thai dessert " Mango Sticky Rice" 
I made Mango sticky rice occasionally because it is high in calories :-P 

Yield: About 2-3 serves  

Ingredients
  • 1 cup glutinous rice 
  • 200 ml thick coconut milk
  • 4 tbsp sugar
  • pinch of salt
  • 2 ripe mangoes

Methods


1.Rise the glutinous rice thoroughly in several changes of cold water. The water should become clean and then soak overnight in a bowl of cold water

2.Drain the rice well and spread the sticky rice evenly in a steamer lined with muslin. Cover and steam over a pot of simmering water for about 20 mins or until rice is tender. Transfer into a bowl.

3.Pour the coconut milk into a pot and add sugar and salt.heat over low fire, starring constantly until the sugar has dissolved.Bring to the boil.  


4.Remove the pot from the heat.Reserve 3 tablespoons of the coconut mixture for drizzling. Pour the remaining coconut milk mixture over the cooked sticky rice. Stir well and leave the rice mixture to absorb coconut milk for 10 mins.

5.Meanwhile, peel the mangoes and cut into slices.

6.Spoon the sticky rice onto a serving plate. Put the mango slices on one side,then drizzle with the reserved coconut milk. It's ready to be served.
