Laab Tofu



Around October each year, Many Buddhists, especially Thai-Chinese in Thailand abstain from eating meat and do penance during this month.Some Buddhists also abstain from other food/things that bring pleasure such as alcohol. 
  
These days people don't eat meat more and more,it's not just during lent.People turn away from meat for a numerous reasons. For myself, I am just bored of meat sometimes. I think vegan or vegetarian food can be exciting and delicious.


Here is Laap Tofu recipe - hot,spicy and sour with mashed tofu that I'd like to share with you. I cook it so many times. It is so simple and easy to cook and delicious.



Yield: serves 2 people 

Ingredients
  • 1 block firm Tofu, mashed
  • 2 kaffir lime leaves, finely chopped 
  • 2 tbsp fresh coriander
  • 2 tbsp spring onions, finely chopped
  • 1 red onion or shallot
  • 1 tbsp roasted ground rice
Sauce
  • 1 tsp ground chilli (or fresh chillies, seeded and chopped)
  • 2 tbsp fish sauce (or light soy sauce)
  • 3 tbsp lime juice
  • 1 tbsp sugar (optional, if you don't like sweet no need to add)

Methods


1.Drain the tofu and mash tofu with fork. Heat the tofu in a frying pan without oil. Stir constantly over a medium heat for 10 mins until the water evaporate. You can add some light soy sauce for colour. Remove the pan from the heat, transfer mashed tofu to a bowl and set aside. 

2.Mix fish sauce, lime juice,sugar and ground chilli in a bowl. Stair until sugar dissolved.Taste the sauce, you can add more sugar, fish sauce if desired.  



3.Add the sauce into the mashed tofu bow. Mix well and add roasted ground rice, spring onion,shallot and coriander. Mix thoroughly.



4. Ready to be served with rice.
