Piggy Pineapple Tarts

The first time I saw these little piggy cookies from a Facebook friend, I thought to myself I have to make these. They are so adorable! During I am waiting for my studies start, I have plenty of time so I decide to bake these cutie little piggy cookie tarts.I adapt from a tart recipe from my baking cookbook. I use simple ingredients and I make a dozen cookies.

Yield: 13 cookies in size of about 4 cm. (use 150 grams of pineapple paste)

Ingredients
  • 100 grams all purpose flour
  • 50 grams butter, chilled and cubed
  • 2 tablespoons caster sugar
  • 1 teaspoon baking powder
  • 2 tablespoons cold water
  • pinch of salt
  • 1 egg yolk, lightly beaten
  • some black sesame seeds (I use linseed)
Pineapple filling
  • 1 canned pineapple in water (about 500 g)
  • 1 tablespoon sugar

Methods
1. Pure the canned pineapple in the food processor (keep the water) blend about 10 sec. until the pineapple are mushy.
2. Put the mashed pineapple into a sauce pan. Add sugar and stair until sugar dissolve. Stair constantly until the juice has evaporated. The pineapple paste become thicker and the colour change to dark brown.
3. Once the pineapple paste is ready, remove from the stove and let it cool down in the fridge 2-3 hrs. This you can prepare overnight.

Pastry
1. Sieve the flour,salt and baking powder together in a bowl. Transfer the flour mixture into the food processor, add butter until well combined.
2. Add sugar and cold water. Blend until form to a soft dough. The dough should not stick to your hands when you touch it.
3.Wrap the dough with plastic food wrap and put in the fridge about 20 mins.

Methods to shape the tarts
1.Roll the pineapple paste into balls about 8 grams each. Divide the dough and roll into balls about 10 grams each. Divide some of the dough to make ears and noses.
2. Flatten the dough with your palm and place the pineapple paste in the centre. Wrap the paste and roll into a ball.
3. Take some dough to make ears and noses. Shape the piggy’s ears and place them on the tarts firmly, otherwise they will become lose easily.
4. Take some  dough and form in oval shape. Use toothpick or skewer punch 2 holes to make nostrils.
5. Place black sesame seeds as the piggy’s eyes.

6. During you are shaping the piggy, preheat the oven at 180 °C degree.
7. Brush egg wash on the tarts. You may choose to brush only some parts such ears and noses. Beware don’t brush on nostrils because they will be disappear.
8. Place the piggy tarts on the baking tray and bake about 20-25 mins. When they are ready,they will have light brown colour. Let them cool down on the rack. They can be keep for a week.

This recipe is crumbly, not too sweet and go good with the sourness of pineapple paste. To be honest, I just don’t want to eat them because they are so cute!
